You are right - well said! Personally I don't know how anyone can look at a sunset, or a flower, or a child and countless other things and not believe. Personally, the idea of being created by a loving, doting God seems much better than being evolved from a monkey. :o)
But didn't the senator say that he isn't saying how God created us? He said that it may be like the bible says (six days and all), but that it may be some other way(because he wasn't there - his words) - he leaves the interpretation open to each voter. Smart - because there will be some Christians who believe in evolution as well as believing in God. Leaving it open ended makes him swing both ways for voters on either side - again smart in a political sense.
